Lemony char and tonka bean sandwich

Soft, juicy, lemony, and aromatic (the tonka bean just lightens everything up). That is what this sandwich is about.

Ingredients

8 slices of toast, crusts cut off
romaine lettuce, thinly sliced
crunchy cucumber, thinly sliced

For the cream:
170 g arctic char
100 g creamy mascarpone cheese
1 tbsp lemon juice
1 tsp lemon zest, thinly shredded
1/3 tonka bean, grated
sea salt to taste
freshly ground black pepper to taste

Place the char in a bowl and mash with a fork. Add the rest of the ingredients and mix. Spread on each slice of toast. Place cucumbers on four of the slices. Spread a bit more of the cream and top with lettuce. Cover with slices of bread (cream side down) and wrap in plastic wrap for 30 minutes so that the tastes and aromas meld together. Serve.
