Green salad with breadcrumbs

I saw this dress. It was all green – pastel green – and immediately I had a vision of me sitting in that dress and eating this salad in the picture. Salad so green, with just some hints of brown and yellow. Just like the dress – all green – with just some hints of other colors. Salad that is so simple, yet so, so full of flavor. I made this for the picture, and then two more times.

Ingredients

for breadcrumbs:
55 g stale sourdough bread
15 g pine nuts
10 g hulled hemp seeds
handful of basil leaves
1 small garlic clove, peeled
sea salt to taste
pepper to taste
3 tbsp olive oil for frying

for salad:
6 small romaine lettuce heads, leaves separated
4 boiled egg yolks
4 tbsp hazelnut oil
freshly ground pepper to taste

Prepare

Heat the oven to 200°. In a blender, blend bread, nuts, hemp seeds, basil, garlic, oil, salt and pepper so that rough breadcrumbs form. Layer on a pan and bake in the oven for 12 minutes until golden.

Place the lettuce leaves on a plate. Sprinkle over the egg yolk, breadcrumbs, and oil. Grind some pepper on top and serve.
