Sandwich cookies

These cookies are made only from leftover dough from making the chocolate tart. Rolle the dough 5mm thick, cut rounds. Place on the pan on a baking sheet, freeze for 30 minutes and bake in a preheated oven (200 degrees) for 20 minutes. Take out, cool on a wire rack. Fill with caramel, hazelnut cream, or raspberry jam. Or you can fill with Italian meringue (as in picture) As the dough is not too sweet, the balance will be perfect.
