Smoked salt whipped butter
A recipe I saw on Instagram. Although he was smoking the butter, I find that using smoked salt takes less effort and gives a beautiful result of an airy, whipped cream-like butter that everyone loves.
In a saucepan, melt 150 g of butter. When melted, pour into a blender and add 150 g of butter at room temperature. Blend on medium speed. At first, it will seem it is not blending, but some seconds later, it will mix up. When the mass is creamy, turn off the blender. Pour this into a mixer bowl. Add smoked salt (this plays a huge role). If you do not have smoked, you can add saffrons or truffle salt, but I do love smoked. And continue to whisk using a balloon whisk. Continue to whisk for about 10 minutes, until the butter gets cooler and triples in three. It might take even 15 minutes. It takes time, but the airy texture is so worth all the effort.
