French potato and mayonnaise salad

A classic in French cuisine. A simple potato salad. And, as it uses so few ingredients, every one of them has to be perfect, especially the mayonnaise, which gives those main flavour notes. 

600 g potatoes
30 g celery stalk, cut into small pieces
20 g grilled paprika, cut into small pieces
Espelette pepper, to taste
50 g organic, good quality mayonnaise
sea salt  to taste
freshly ground black pepper, to taste
1 tbsp chopped parsley

Steam or boil potatoes until ready, but not too much, as they need to hold the shape. When ready, strain them and let them cool completely. If you are boiling larger ones, cut them into smaller parts (not too small, though). If you are doing medium, then just cut them in half or four. 

Place them in a bowl, add the rest of the ingredients, mix, and refrigerate for an hour for the flavors to marry. Serve.
