Chicken sandwich

This is my easy-to-go version with everything – crispness and freshness from lettuce, smoothness from avocado, tastes from mustard and pesto, and body from the left-over chicken. And, the crunchiness from the most important part – a baguette.


4 pieces of fresh baguette, 15-20 cm for each person
4 tbsp pesto
4 tsp Dijon mustard
chicken leftovers, pieces
2 large or 4 small ripe avocados, smashed a bit
4 handfuls of your favourite lettuce (I use a mixture of romaine and ruccola)
a small handful of thinly sliced parmesan

Cut the baguette open. Spread pesto on one side, on the other, mustard. On the bottom, place avocado, lettuce, and chicken. Sprinkle with pepper and top with the other half of the bread. Enjoy.


PS. You can make this sandwich with many other things. Finely slice cucumbers instead of lettuce. Hummus or aioli instead of pesto. You can omit the parmesan and use pecorino or even mozzarella.
