My chocolate sausage

My dearest childhood recipe. Well, at least one of a few. When products were hard to find, money was fixed, yet appetites huge.

100 ml sweet cream
1 tbsp honey
75 g 70% dark chocolate in pieces
140 g butter, in pieces
20 g cacao
1 egg (optional)
1 organic orange zest, finely grated
200 g cookies (like sables in France), in pieces
100 g hazelnuts, toasted and chopped
100 g marmalade candy squares
cacao to coat


Heat the cream and honey until the first bubbles appear. Pour over the chocolate and let sit for a minute, and then stir until the chocolate has melted. With hand whisk, add pieces of butter - adding the next one when the first has melted. Mix in cacao. If using, mix in the egg (if not using, the sausage will still be tasty, just tiny bit harder). Add orange zest, nuts, marmelade, and  cookies, and mix with a spatula. Cover with plastic wrap and let sit in the fridge until it has the consistency that you can roll into a sausage.

When it is ready to be rolled, make one long sausage, wrap in baking paper and roll more if needed. Cover with plastic wrap and let sit in the fridge for a few hours. Roll in cocoa and powdered sugar before cutting. Serve.
