Dinner for 1. Haricots and chicken

There comes a time in life when one has to stay alone at home longer than just for a few days. Alone, with no kids and no husband. Alone, with cats and dogs and a handful of great neighbors and friends, yet with the idea that most of the dinners will be shared between you, yourself, cats, dogs, and a wide variety of movies to be seen. And even then, one can avoid cooking, yes, but one can also embrace that moment and cook whatever the heart desires and body asks for, not thinking about the needs of others. And this is one of those recipes I made while living alone. On day six or seven, I absolutely loved it.

And, as I did make it for myself, I have no precise measurements, but sharing the idea in hopes that it might inspire you.


handful of haricots
leftover chicken roast - pieces
bit of lettuce
a few peppermint leaves
a few parsley leaves
a few slices of avocado
sea salt to taste
1/3 tsp Dijon mustard
1 tbsp mild extra virgin olive oil


Blanch the haricots. Boil water and add a generous amount of salt. Add haricots and boil for 3-4 minutes (if they are very thin, then just 2 minutes). Drain and place right away in ide cold water. If you have, add ice. If not, drain and fill up with cold water again when the water gets warmer. That stops cooking and does not let the bean get soggy. When cold, drain and pat dry.

Combine the rest of the ingredients (except chicken) in a bowl and mix. Place on a plate and top with chicken. Sprinkle with pepper and serve.
