Pear and blue cheese salad

There’s something magical about the pairing of blue cheese and a pear. The saltiness of the cheese marries perfectly with the sweetness of the pear-like no other combination. That’s why I love to use them in a salad, especially together with nuts (either walnuts or hazelnuts). In this recipe, I use poached pears that I make while preparing this Tarte Bourdaloue and serve them after dinner.

300 g crispy lettuce, like romaine, Batavia, feuille de chêne, or something similar
4 tbsp hazelnut oil
100 g blue cheese, like Bleu d'Auvergne or Fourme d'Ambert
sea salt, to taste
freshly ground pepper, to taste
50 g roasted hazelnuts, finely chopped
4 medium poached pears (I use leftovers from this recipe) or very ripe fresh pears, sliced into 6 slices


Put the salad in a bowl with the oil, salt, pepper, and cheese. Mix using your hands so that the oil gets into every leaf and the cheese kind of melts into the slices. Put the salad on a serving plate and top with pears and nuts. Serve.
