Strawberry and lavender jam
There's nothing quite like strawberry jam. Even in summer, when there are plenty of them, that combination of strawberries and sugar boiled together is something else. Although it's in my blood to boil jam with too much sugar and no pectin at all (like we should do), I went for a less sweet version using organic pectin this time.
800 g cleaned strawberries
350 g golden caster sugar
1 lemon juice (around 40 ml)
1 tbsp orange blossom water
1/2 vanilla pod
1 tbsp lavender
10 g pectin
Mix sugar with pectin and strawberries, and add lemon juice. Leave for 1h.
Prepare jars.
Mix sugar with pectin and put the strawberry mixture into a large pot. Add spices and gently heat until the sugar dissolves. Turn the heat up to the highest and boil for two minutes (skimming off the foam). Take off the heat and leave to rest for 5-10 minutes, and then pour in sterilized jars.
