Halloumi with melon
For this recipe, all you need is halloumi cheese. It depends on how many people you're cooking for, but if you're eating on your own and this is your whole dinner, then one packet of halloumi is about right. Cut the halloumi into 5 mm slices.
In a bowl, mix together diced, very sweet, ripe melon with chopped peppermint. Add a generous glug of mild olive oil, plenty of freshly ground black pepper, and just a tiny pinch of salt. It really is only a pinch, because the halloumi is already quite salty.
Heat a frying pan until it's properly hot. Don't add any oil. Fry the halloumi on both sides until it's beautifully golden.
When it's ready, arrange the halloumi on a plate and top it with a generous amount of the melon salad. It really does need to be quite a lot of melon, otherwise the halloumi can be a bit too salty on its own. The sweetness of the melon is what balances everything. Serve straight away.
