B7. Riga

I met him as a chef in 2012, when he served us dinner in the garden of a manor where he worked. And I loved every bite of that meal. I’d eaten in restaurants he had before, and the moment he opened B7—two years ago—I knew I’d be visiting that one too. And we did.

B7, a restaurant by chef Valters Zirdziņš, is—like someone said to me yesterday—the biggest asset on Riga’s dining map. And I must agree (with a few others in close competition), as this place is a tempting and satisfying experience from the moment one enters to the moment one leaves.

First, the experience lies in the details of the intérieur: dark tones mixed with beautiful tiles, dimmed lighting, and vinyls placed neatly in the almost-centre of the room. But then it’s elevated by the greeting from the chef and his colleague, who both serve the tables—making the meal even more personal, even more beautiful.

And then comes the food. From simple yet perfected plates—liver pâté, finely chopped tartare with crispy onions, labneh—to organic chicken served with salad, or cauliflower topped with summer truffles and Comté cheese. The menu is small, straightforward, and thoughtfully curated—yet the flavours are rich and refined.

To finish, there are just three desserts: a tiramisu that’s darker and deeper in taste than usual, panna cotta that’s lighter and creamier, and a pecan pie that’s satisfyingly crunchy. All perfect. Truly, perfect.
