Limoncello / Limoncino

Ingredients

6 medium/large organic lemons
1l vodka
200 g. white sugar
200 ml water

Prepare

Use a vegetable peeler to remove the peels from lemons, removing only the outer yellow skin and no white part. Place in a jar, cover with vodka, Screw on the lid, and leave for 3 months. 

After the time, strain the vodka with coffee filter the best. 

Prepare sugar syrup, placing sugar and water in a kettle, and bring it to a simmer. Stir in the sugar to dissolve; allow to cool. Pour the syrup into the infused vodka, and stir gently to mix. Taste and add additional sugar syrup if desired (see above).

Insert the funnel in the neck of one of the bottles and fill with the drink. Use bottles of your desired sizes. 

When serving, chill in the fridge or freezer for at least 4 hours before drinking. Limoncello can be kept in the fridge for up to a month or the freezer for up to a year.
